About Food Science & Technology
The science and engineering of producing safe, high-quality food. Courses carry the FDSC subject code and are offered through the College of Education, Health & Human Sciences. Numbers below 300 are introductory, 300–499 advanced undergraduate, and 500 and above graduate. Prerequisites are enforced at registration.

FDSC 1500 — Introduction to Food Science 3 cr
The composition of food, the food system, and the disciplines of food science.
Prerequisite: CHEM 1050.
FDSC 2100 — Food Chemistry 4 cr
Water, carbohydrates, lipids, proteins, and reactions during processing and storage, with lab.
Prerequisite: CHEM 2210.
FDSC 2300 — Food Microbiology 4 cr
Spoilage and pathogenic organisms, fermentation, and controlling microbial hazards, with lab.
Prerequisite: BIOL 1010.
FDSC 2500 — Food Processing 4 cr
Thermal processing, freezing, drying, extrusion, and packaging, with pilot-plant work.
Prerequisite: FDSC 1500.
FDSC 3100 — Food Analysis 4 cr
Proximate analysis, chromatography, and spectroscopy for composition and quality, with lab.
Prerequisite: FDSC 2100.
FDSC 3300 — Sensory Evaluation 3 cr
Discrimination, descriptive, and consumer tests, panel training, and statistics.
Prerequisite: FDSC 1500, MATH 1600.
FDSC 3500 — Food Safety and Quality Systems 3 cr
HACCP, preventive controls, auditing, and regulatory requirements.
Prerequisite: FDSC 2300.
FDSC 3700 — Product Development 3 cr
From concept and prototyping through shelf-life testing and a scale-up plan.
Prerequisite: FDSC 2500.
FDSC 4900 — Food Science Capstone 3 cr
A team develops a new food product for an industry sponsor, from brief to a validated prototype.
Prerequisite: senior standing.
