About Dietetics
Food, nutrition, and medical nutrition therapy. Courses carry the DIET subject code and are offered through the College of Education, Health & Human Sciences. Numbers below 300 are introductory, 300–499 advanced undergraduate, and 500 and above graduate. Prerequisites are enforced at registration.
How the sequence works
Of the 9 DIET courses listed, 3 are introductory (numbers under 300), 1 is advanced undergraduate (300–499). 1 course has no prerequisite and is a reasonable first step. Later courses assume the earlier ones, so read prerequisites before you plan a term — they are enforced at registration and an override from the Dietetics department is the only way around them.
DIET 1500 — Introduction to Nutrition 3 cr
Nutrients, requirements, food sources, dietary patterns, and evaluating nutrition claims.
Prerequisite: none.
DIET 2200 — Food Science 4 cr
Composition and behavior of food, cooking chemistry, safety, and functional properties, with lab.
Prerequisite: CHEM 1050.
DIET 2500 — Nutrition Through the Lifespan 3 cr
Changing needs from pregnancy through older adulthood and the factors that shape intake.
Prerequisite: DIET 1500.
DIET 3100 — Nutrition Assessment 3 cr
Anthropometric, biochemical, clinical, and dietary assessment methods and their interpretation.
Prerequisite: DIET 2500.
DIET 3300 — Medical Nutrition Therapy I 4 cr
Nutrition care for cardiovascular, gastrointestinal, and renal conditions, with case studies.
Prerequisite: DIET 3100.
DIET 3500 — Community Nutrition 3 cr
Program planning, food assistance, policy, and delivering nutrition education to a group.
Prerequisite: DIET 2500.
DIET 3700 — Food Service Systems Management 3 cr
Menu, procurement, production, sanitation, and financial management in institutional food service.
Prerequisite: DIET 2200.
DIET 4100 — Medical Nutrition Therapy II 4 cr
Nutrition support, critical illness, oncology, and endocrine conditions.
Prerequisite: DIET 3300.
DIET 4900 — Dietetics Capstone 3 cr
An integrative case portfolio and a supervised-practice readiness project.
Prerequisite: senior standing.
